There are three major coffee growing regions in the world: Central and South America; Africa and the Middle East; and Southeast Asia.
THE BEAN ORIGIN
It all begins with the harvesting of beans.
The most common type of coffee bean is the Coffea arabica, with origins in Brazil, East & Central Africa, India and Indonesia.
Coffee beans are usually packaged in bags woven from natural materials such as jute or sisal to allow good air circulation, and mostly shipped by sea.
To maintain optimum freshness, coffee beans should be at shipped at conditions of no more than 60% humidity.
For roasted beans that are air-flown, provisions are made to allow for changes in air pressure, such as placing stickers over the valves of vacuum-sealed bags.
FLAVOUR PROFILE
We know of the humble coffee bean as a brown seed, but there are actually four levels of roasting that turn the raw green pods into aromatic beans:
Light, Medium, Medium/Dark and Dark.
LIGHT
Light Roasts are fruity and retain a higher caffeine level from the bean
MEDIUM
Medium Roasts are slightly sweet, balancing flavour, aroma and acidity well
MEDIUM-DARK
Medium/Dark Roasts have a bittersweet aftertaste, with lower caffeine and acidity
DARK
Dark Roasts have a bitter, smoky and burnt taste, with the original bean flavour eliminated.
