New creations by Shang Palace this year are headlined by the applewood-smoked rice dumpling with abalone, Matsutake mushroom, foie gras and smoked chicken, part of its Masterchef Series of dishes conceptualised by the hotel group’s regional properties’ master chefs. Served alongside specialty Szechuan chili sauce, this spectacular dumpling is limited to just 100 pieces.
Another new item to order is the Heritage of Asia rice dumpling gift set, limited to just 100 boxes. The peach hexagonal box contains six dumplings each representing flavour influences from the region: Yunnan mushroom rice dumpling; Fujian-style rice dumpling with abalone, roasted pork, sea cucumber and dried shrimp; pad kra pao moo-flavoured rice dumpling; foie gras, parma ham and roasted chicken rice dumpling with X.O. sauce; sweetened purple glutinous rice dumpling with custard; and white lotus seed paste with truffle honey lye dumpling.

Resorts World Sentosa carries on its tradition of collaborating with its chefs and its vast collection of restaurants to present a multicultural selection of rice dumplings. This year, eight of its chefs teamed up on the project to produce a set of eight rice dumplings that reflect myriad influences, from Ocean’s Jewels Dumpling that features responsibly harvested sea whelk from France, to Syun’s Japanese pressed sushi-inspired Chest of Pearls Dumpling that contains Japanese sea bream and Tajima Wagyu beef and is served chilled, to the Siamese Jade Dumpling that comprises glutinous rice and fresh coconut milk, just like the popular Thai dessert.

The popularity of Szechuan mala has led Man Fu Yuan to develop its new mala-braised beef brisket dumpling, packed with marinated and braised beef along with mushrooms, bamboo shoots, coriander and tingling spices. The restaurants signature Duroc pork char siew finds its way into the smoked Duroc pork char siew dumpling with black gold garlic, which adds earthiness – and healthful antioxidants – to the indulgent treat.
Those looking to gift rice dumplings to family and friends can opt for the gift sets, each of which includes four dumplings packed in a limited-edition carrier, along with two canisters of Man Fu Yuan’s signature teas, or a Taittinger Brut Reserve Champagne NV Half Bottle, or a Taittinger Brut Reserve Champagne NV Half Bottle and one canister of tea.
Man Fu Yuan’s Executive Chinese Chef Aaron Tan will even be conducting 90-minute classes on dumpling wrapping technique on Sundays until 13 June, and participants will receive four dumplings in addition to mastery and appreciation of the traditional craft.

For the Dragon Boat Festival, Paradise Group presents its Luxury Trio Dumplings Gift Set, led by the new spicy smoked duck with dried shrimp dumpling; it is stuffed with smoked duck, pork belly, dried shrimp, shiitake mushrooms and more, and served with a house-made mala sauce. The other two dumplings that make up the set are the deluxe pork with conpoy and chestnut dumpling, and the black truffle five grain dumpling. The former features pork belly with deep-fried shallot and five spice, while the latter, a favourite from 2019 that’s back by popular demand, is packed with roasted pork belly, chestnut and salted egg yolk, and elevated with black truffle, truffle oil and sesame oil.

Hokkien- and nyonya-style rice dumpling may be more ubiquitous, but the Hainan Story places the Hainanese variety in the spotlight. Grandma’s Hainanese Bak Chang contains a hefty hunk of braised pork belly – a beloved traditional Hainanese dish in its own right – surrounded by chestnuts, peanuts, mushrooms and salted egg yolk. And palm sugar syrup is the recommended accompaniment.
